Introduction – the story behind Darjeeling Tea

Few teas in the world command the same respect as Darjeeling Tea. Often compared to fine wine, Darjeeling black tea is delicate yet complex, with floral, muscatel and sometimes even nutty notes.

But Darjeeling Tea, black tea’s queen, is more than just a flavour – it’s a tradition, an art and a product of its unique high-altitude Himalayan environment.

At Hampstead Tea, we’ve spent over 30 years working directly with tea farmers in Makaibari Tea Estate, the world’s first biodynamic and organic tea gardens and one of the best tea producers in Darjeeling. Our founder, Kiran Tawadey, dedicated decades to supporting sustainable farming in the region, ensuring that each cup of Darjeeling black tea is a delight for both those who drink it and who make it.

In this guide, we’ll explore what makes Darjeeling Tea unique, its health benefits, how to brew it perfectly, and the best organic options available today.

What is Darjeeling Tea?

Darjeeling Tea vs. regular black tea

Most black teas, like Assam tea, are bold, malty, and rich. Darjeeling black tea, however, is lighter, more fragrant, and layered with complex floral and muscatel notes

The reason? It grows in a unique area of India, backdropped by the Himalayas.

A tea shaped by the Himalayas – how Darjeeling's terroir shapes its taste

High in the Eastern Himalayas, where crisp mountain air meets the warmth of the Bay of Bengal, the misty slopes are covered in tea bushes and jungle. Nestled between Nepal to the west, Bhutan to the east, and Sikkim to the north, this is the area of Darjeeling.

Darjeeling is no ordinary black tea. Known as the 'Champagne of Teas," Darjeeling black tea owes its unique character to a perfect storm of environmental factors—from its mineral-rich soil and persistent mountain mists to the expert hands that have nurtured it for over 150 years.

The high-altitude advantage – why geography matters

Unlike the lowland tea estates of Assam, where thick, tropical humidity creates bold, malty teas, Darjeeling Tea thrives at altitudes between 600 and 2,000 metres.

  • Cool Himalayan air slows growth – This allows tea leaves to develop deeper complexity and floral notes.

  • Steep slopes ensure excellent drainage – Tea bushes aren’t waterlogged, preventing bitterness in the leaves.

  • Morning mists and afternoon sun – This natural cycle locks in delicate aromas and prevents over-drying.

  • Acidic, loamy soil rich in organic material – Just like a vineyard shapes fine wine, this soil gives Darjeeling Tea its signature bright, muscatel notes.

🌱 Kiran Tawadey, founder of Hampstead Tea, has spent over 30 years working with tea growers in Darjeeling. Her expertise and close relationships with organic and biodynamic tea gardens ensure that every sip of our Darjeeling Tea reflects the purest expression of this unique terroir.

Darjeeling First Flush vs. second flush

Darjeeling Tea is harvested in flushes, meaning different times of the year. The first two flushes are the most prized:

  • First flush Darjeeling Tea (March-May) – Light, floral, and fresh with delicate aromas. This is the most expensive and sought-after Darjeeling Tea.

  • Second flush Darjeeling Tea (May-June) – Richer, more complex, with muscatel notes. The tea leaves develop deeper character, creating a bold yet smooth brew.

💡 Did you know? Some Darjeeling Teas even develop notes of honey, apricot, or spice, depending on the garden and season.

How Darjeeling Tea is made

In Darjeeling, small scale growers use orthodox rolling techniques to bring out the natural taste of the leaf. Mass-produced teas, in contrast, use CTC, where leaves are chopped up into a fine bitter dust.

1. Withering (drying the leaves)

Freshly plucked leaves are spread out to air-dry overnight, reducing their water content without damaging the leaf structure.

2. Rolling (gently shaping the leaves)

Instead of breaking the leaves (as seen in mass-market teas), Darjeeling Tea leaves are lightly rolled to initiate oxidation.

3. Oxidation (unlocking natural taste)

Oxidation is what turns fresh green leaves into black tea. Darjeeling first flush tea undergoes less oxidation, keeping it light and bright, while second flush and autumn flush teas are oxidised longer for richer flavours.

4. Drying & sorting

Leaves are dried at low temperatures to lock in the natural taste, then sorted based on size and quality. The best grades retain their whole leaf structure, while smaller fragments are used in Darjeeling Tea bags.

Darjeeling Tea benefits – why should you drink it?

Beyond its exquisite taste, Darjeeling black tea benefits extend to health and well-being:

1. Packed with antioxidants

Darjeeling Tea is rich in polyphenols, which help fight oxidative stress, reduce inflammation, and may support heart health.

2. Gentle caffeine boost

Unlike coffee, Darjeeling Tea offers a smooth and steady release of caffeine, keeping you alert without the jitters.

3. Supports digestion & gut health

Tea polyphenols promote healthy digestion and may help balance gut bacteria, reducing bloating and discomfort.

4. Great for mental focus & relaxation

L-theanine, a natural compound in tea, works with caffeine to enhance focus while keeping you calm.

5. Better for the earth

Organic Darjeeling Tea is grown without synthetic pesticides or herbicides, preserving biodiversity and preventing soil degradation.

How much caffeine is in Darjeeling Tea?

One of the most common questions about Darjeeling Tea is:

💡 "Does Darjeeling Tea contain caffeine?"

Yes! But less than coffee and most black teas.

Tea Type

Caffeine (per 250ml cup)

Coffee

95-120mg

Assam Black Tea

50-80mg

Darjeeling Black Tea

40-60mg

Green Tea

30-50mg

Since Darjeeling Tea caffeine is released more gradually, it provides a steady energy lift without crashes.

How to brew Darjeeling Tea

Brewing Darjeeling Tea properly is key to unlocking its delicate taste. Here’s how:

Use fresh, filtered water – Water quality makes a huge difference.
🔹 Heat to 85-90°C – Avoid boiling water, which can make the tea bitter.
🔹 Steep for 3-4 minutes – A shorter steep time retains the tea’s floral sweetness.
🔹 Enjoy black or with lemon – Unlike Assam tea, Darjeeling Tea is best without milk to preserve its light notes.

Pro tip: If using loose leaf Darjeeling Tea, let the leaves expand fully for maximum taste.
